How to preserve Fresh Genoese Pesto 

 Fresh Genoese Pesto without preservatives is a delicate product. Simple care, allows its fragrance, colour and taste to be preserved for a few weeks so that you can fully enjoy its taste and fragrance. 

 

The jar of Pesto should be kept in the fridge until use, which must not exceed the date on the jar given by the producer. If only part of the pesto in the jar is eaten, the remaining pesto should be totally covered with plenty of extra virgin olive oil, so as to prevent air coming into contact with pesto. In this case, the best-before date given by the producer may no longer be valid. This depends on the state of preservation after opening the jar.

 

How to season the pasta with pesto
Put a few spoonfuls of pesto in the bottom of a bowl which is appropriate for mixing and serving the pasta. You can make the pesto a little runnier by adding a little of the boiling water which you cooked the pasta in.

It’s always a good idea to put aside a little of the water in which you cooked the pasta, in case you need to further dilute the pesto.

Drain the pasta, beans and potato slices and tip all of them into the bowl. If necessary, add some more pesto on top of the pasta and a drizzle of Ligurian extra virgin olive oil DOP or similar.

Mix the pasta well to season the pasta evenly and serve it hot.
