Pesto Parodi is like the pesto found daily on the Genoese’s dinner tables, made with basil cultivated on our hills overlooking the Ligurian sea (Genoese basil DOP) in the zone of Prà, the area most suitable for the production of Genoese basil.
Very fragrant and tasty, the harmonious and lingering taste provides long-lasting pleasure. A delicate but definite flavour, the sweet and delicate taste of the basil from Prà fuses perfectly with that of the other ingredients; parmesan cheese, Sardinian sheep’s milk cheese, garlic, extra virgin olive oil, pine nuts and salt, skilfully proportioned and mixed until altogether, a great symphony of flavours is created and no single flavour dominates the others.
Pesto Parodi is the ideal match for typical Ligurian pastas, both fresh pasta and dry pasta. Like troffiette di Recco (short, twisted Ligurian pasta), gnocchi di patate (potato pasta), trenette, trenette avvantaggiate, (narrow ribbon pasta), lasagne (sheet pasta), corzetti (thin circles of pasta), testaroli della lunigiana (Tuscan sheet pasta); but it is also a fundamental ingredient in minestrone alla genovese, a soup made with fresh seasonal vegetables. Genoese pesto is extremely versatile and is an excellent sauce for many other types of pasta on the market.
