Pesto Parodi is the real fresh Genoese Pesto, made by hand and without preservatives. We don’t use preservatives of any type including ascorbic acid or vitamin C, because they change the taste of the pesto and basil, giving it a ‘foreign’ taste. Try putting lemon in the pesto… The ingredients are those traditionally used in Genoese Pesto. Starting with Genoese Basil D.O.P. cultivated in the zone of Prà, that is, basil from the zone most suitable for the production of Genoese basil. Followed by Ligurian extra virgin olive oil, with a basically sweet and delicately fruity flavour, exquisite garlic from Vessalico, tasty Italian top quality pine nuts from Pisa, parmesan cheese DOP (Parmigiamo Reggiano DOP) matured for 24 months and Sardinian sheep’s milk cheese DOP (Pecorino Sardo DOP) matured for 12 months, the exquisite Garlic from Vessalico (Province of Imperia) ‘Italian slow food presidia’, and the right amount of Italian sea salt; all chosen with extreme care in order to guarantee an unmistakably characteristic product of the highest quality, one hundred percent Genoese, as its name suggests. The Classic Recipe is a harmonious fusion of the 7 ingredients of the traditional recipe; with a pleasant taste of garlic and Sardinian sheep’s milk cheese. A delicate and characteristic flavour with just enough of a taste of garlic. It gets the agreement of all pesto lovers. The Garlic-Free Recipe is like Classic Pesto but without garlic; for those who don’t like the smell and taste of garlic. Especially popular with children. PURCHASING GUIDE Fresh Genovese Pesto is shipped on a Wednesday, the same day that it is made. (see times and costs by clicking on the link ‘Deliveries’) On 90g jar of pesto is sufficient to season 200/250g of pasta. NB: the amount of pesto necessary to season the pasta properly given above is approximate and can vary according to the characteristics of the pasta used (whether dry or fresh, its shape, its capacity to hold the sauce, etc). Our Fresh Genoese Pesto is made without any preservatives and must therefore be consumed within 3/4 weeks of production, by the date given on the jar. The jars of pesto which are not eaten immediately can be frozen and eaten at a later date. *the jars of pesto must be frozen as soon as you receive them (we make the pesto immediately before it is shipped).
